Feta Stuffed Meatballs Recipe

Just when you thought you couldn’t face cooking another meatball in your life… here’s a simple and kid-friendly recipe to try.
I’ll be posting weekly recipes this year, as an encouragement to myself to cook new meals with fresh and healthy ingredients. I’m also working with Hello Fresh this year, they have wonderful recipes on their website.
Feta Stuffed Meatballs
Prep time: 5 mins
Cook time: 10 mins
Serves four people
You will need:
500 grams beef mince
2 tbs olive oil
1 bunch oregano, leaves picked and roughly chopped
1 block feta cheese cut into 12 pieces
- In a bowl mix together the beef mince and the oregano and then season with salt and pepper.
- Roll the beef into meatballs, approximately 12 is ideal. Push one piece of feta into the middle of each meatball then squeeze to make sure the meatball is sealed.
- Fry meatballs in a large frying pan in a dash of olive oil. This will take 8 – 9 minutes, make sure they are browned and cooked through.
- Service with plenty of veggies!
