Chocolate + Coconut Thermomix Protein Balls: Yummy + Healthy Too

A healthy Thermomix protein ball, great for after school snacks

These chocolate and coconut Thermomix protein balls are just outrageously delicious. They are easy to make and very healthy. Win, and win again.

The secret ingrediant is coconut butter and I’ve got Sarah Wilson to thank for it.

In her ebook “I Quit Sugar Cookbook’ she has the recipe for coconut butter, which is basically dried, shredded coconut milled in a blender until it is totally soft and spreadable.

I made it in the Thermomix, it doesn’t take long. A less powerful blender might take longer. All you do is blend up the coconut, I have used flakes and also desiccated coconut, scraping down the sides regularly.

I make a batch of coconut butter and keep it in the fridge.

Sarah writes: ‘This is the cheapest, easiest, most nutritious and damn tastiest thing in this book.’

Here are more of the ingredients you need for these Thermomix protein balls And here they are, ready for decoration Thermomix chocolate protein balls, drizzled with dark chocolate to make them more appealing to the kids

Here’s the recipe for these protein balls.

  • 100g dates
  • 50g dried apricots
  • 100g coconut butter
  • 80g ground almonds
  • 40g walnuts
  • 30g cocoa powder
    1. Put dates and apricots in a bowl and cover them with warm water for 10 minutes.
    2. Drain off the water.
    3. Put all the ingredients into the Thermomix and blend until very smooth.
    4. Wet your hands and roll into little balls. Put them into fridge or freezer for 30 mins.
    5. Drizzle with dark chocolate or decorate in your favourite way.

Yum!! Delicious, and beautiful to look at… and good for you!!

I made these for the children initially. They made a bit of a special after school snack.

But I’ve also given them to teachers, taken them to dinners and scoffed them myself as sheer comfort food.

For a less healthy treat that my kids love to make themselves try this Simple Chocolate and Condensed Milk Truffle. That’s the recipe I learned at primary school just a few decades ago

Now, if you do not have your own Thermomix then another powerful blender will probably work just as well. Give it a bash!
