Hold On! I CAN Cook ! Marmalade and Mascarpone Ice Cream – Yum!
Not long ago, I posted a comment on a blog and said passingly, ‘I’m not a confident cook.’
Then I read my own post about happiness depending on how I speak to myself and thought; ‘Aha! That unconfident cook self-talk has to stop!’
Because… I can cook… and sometimes I even do. And IN FACT, now the twins are getting older it’s getting easier.
I do love a bit of time, time to plan, shop and prepare. Secretly I adore cooking and baking in the kitchen with no helpers. Shhh… don’t tell the bairns….
Here’s the proof. I made this absolutely delicious and quite outrageous marmalade and mascarpone ice cream recently.
I made it on a quiet Saturday night with two children asleep and the big boys watching a boys’ movie with their dad. It was tricky and I stirred in fear and dread of turning the custard into scrambled egg. But it worked fine.
AND I made a passable pavlova with the leftover egg whites. HATE wasting food.
