Healthy Raw Chocolate Truffles Recipe – Easy In The Thermomix

These raw chocolate nut truffles are just outrageously delicious.

The secret ingrediant is coconut butter and I’ve got Sarah Wilson to thank for it.

In her ebook “I Quit Sugar Cookbook’ she has the recipe for coconut butter, which is basically dried, shredded coconut milled in a blender until it is totally soft and spreadable.

I made it in the Thermomix, it doesn’t take long. A less powerful blender might take longer.

So I took the coconut butter as the starting point and then added in some of my favourite nuts and dried fruit.

Superfood chocolates!

Ingredients

  • 100g dates
  • 50g dried apricots
  • 100g coconut butter
  • 60g ground almonds
  • 40g walnuts
  • 30g cocoa powder

Instructions

  1. Put dates and apricots in a bowl and cover them with warm water for 10 minutes.
  2. Drain off the water.
  3. Put all the ingredients in a blender and blend until very smooth.
  4. Wet your hands and roll into little balls. Put them into fridge or freezer for 30 mins.
  5. Drizzle with dark chocolate or decorate in your favourite way.

But I’ve also given them to teachers, taken them to dinners and scoffed them myself as sheer comfort food.

For a less healthy treat that my kids love to make themselves try this Simple Chocolate and Condensed Milk Truffle.  That’s the recipe I learned at primary school just a few decades ago
